Thanksgiving 2011 was very different this year.  In "Thanksgivings Past" we have always had a full house and enough food to feed at least a dozen more and still have leftovers!  This year Mom had knee replacement surgery on 11/11/11, so Thanksgiving would find her still "rehabilitating" at LifeCare of Gwinnett.  So, Chuck and his family celebrated with Niki's family and Eric took "the girls" to his family in Alabama.  This left Charlene, Mom and I to celebrate a quiet day together.  Since the Center is so close to my house (1/2 mile), we decided to "spring mom from the joint" for the afternoon, if she was feeling adventurous.

Since it was just the 3 of us, I opted to do a Roast chicken, rather than turkey. Truth be known, we would much rather have chicken than turkey!  Between the two of us, we put out an outstanding spread, if I don't say so myself!  Roast Chicken, my Mom's dressing (Charlene threatened me if i did anything other than Moms dressing -some things just can't be messed with!), gravy, mashed potatoes, green beans, sweet potato dumplin's (my favorite), slaw, deviled eggs, homemade cranberry/blueberry sauce and rolls. Pecan pie and Apple Cake with caramel sauce and whipped cream came much later!




We sure did miss everyone gathered at her table, but our little celebration served the purpose of being Thankful for God's bounty. 

I am so very thankful for my family, whether we are all gathered at the table together or at another table. I am thankful Mom's surgery was successful and she is on the path to recovery.  I am thankful for my extended family and many friends. I am thankful I got the majority of my Christmas shopping done on Black Friday. And, I am really thankful that The University of Georgia beat Georgia Tech!

My feature recipe comes from my sister Charlene.  Her famous Sweet Potato Dumplings.  If you are looking for a "different" way to serve sweet potatoes. this recipe is for you!   Also great with a Pork Chop!

Sweet Potato Dumplings

4 sm. baked sweet potatoes                          3/4 cup sugar
1 pkg. cresent rolls                                       1/2 stick butter
1 cup water                                                  1 tsp vanilla

Peel and cut in half each baked potato.  Form each piece into a ball.  separate crescent rolls.  Place ball of sweet potato in crescent roll.  Roll up and place seam side down in a casserole dish.  Combine water, sugar, butter and vanilla in a sauce pan.  Heat to boil.  Pour over the eight potato rolls.  bake 30 minutes at 350 degrees.

Note - You can also use frozen sweet potato patties  instead of baked sweet potaoes.  Some like this as a dessert instead of a side dish!

Celebrating: Road trips!

Celebrating: Road trips!: I was really thinking the Fall colors this year have not been as vibrant as years past.  I thought perhaps our drought had really made its impact not only on our lakes, but our trees. I have been walking in the park surrounded by trees and it just wasn't what I imagined it was going to look like.  However, like most everything else in my life, I was being impatient. For this past weekend it finally erupted into a kaleidoscope of  oranges, reds and yellows.  The street leading into my subdivision is a flurry of color and the walk in the park is a glorious experience. And, I know God loves me for he has painted the sky each day with my favorite color!

It was the perfect weekend for a short "road trip" into the North Georgia mountains.  Mom, Aunt Mona and I set out Friday afternoon for our overnight adventure.  We took our time and stopped along the way to check out a couple of Antique houses and arrived in Cleveland, Ga. (where we stayed) just in time to beat the dinner crowd. Dinner at Ma Gooches was great!

Then up and off early Saturday morning to go to Helen.  Helen, Ga is a charming town nestled in the mountains that resembles a German village, and is easily one of the most popular tourist destinations in Georgia. It is a wonderful place to visit during Octoberfest, but Christmas is enchanting!  We made one pit stop - an open aire Flea market was too hard to resist!  We got to Helen rather early, so we decided on the spur of the moment to just continue driving up to Hiawassee, which is REALLY in the mountains.  What a great decision that turned out to be!  The mountains were spectacular!  Every curve proved to be an even more brilliant scene than the one before! Once we arrived in Hiawassee, we managed to find another antique shop to plunder!  I am looking for a certain item, of which I found a couple,  but they just were not "it" so my search continues!

Once back in Helen, I think that half  of the state of Georgia had decided to go there as well.  Unfortunately, it was lunch time, so all the restaurants were filled, with lots of people waiting, and we missed out on the German cuisine typical for Helen.  We shopped a bit in Helen, tasted some great Fudge samples and watched the cutest show with a dog and some parrots. Then a quick stop for lunch outside of town, for we had one more stop before home.

Jaemore Farms was on the way home, so of course we had to stop.!  I think the other half of Georgia was there attending a fall festival with "bouncies" and a corn maze.  But the thing on our mind was apples!  And they didn't disappoint - lots of varieties to choose from!  Mom got a basket full for baking and hopefully making my personal favorite  - Apple Danish!  I'm sure the dehydrator was humming on Monday.  I also managed to find lots of other fall treats - cider and pumpkin butter were in my buggy along with a wedge of hoop cheese for Grilled cheese sandwiches, for it makes the very best!

What a great mini trip!  Antiques, apples and breathtaking scenery is hard to top, but sharing it with Mom and Aunt Mona made it even more special!  The sound of their giggling and telling funny stories of  their past , you just can't put a price on that! It will truly be a weekend to remember!

Apple Danish
6-8 apples                              1 egg separated
1 cup sugar                             1/2 cup milk
1 tsp cinnamon                        1 cup shortening (I use Crisco)
1 tsp vanilla                             1/2 cup crushed cornflakes
2 1/2 cups all purpose flour

Peel & slice apple.  Mix apples, sugar, cinnamon and vanilla and set aside.  Mix flour, milk, egg yolk and shortening.  Divide dough.  Roll half of dough out to fill a cookie sheet,  Place cornflakes on crust.  Spread apple mixture over the cornflakes.  Roll out the other half of dough and cover the apples.  Beat the egg white until stiff and brush the top of crust.  Bake 45 minutes at 350 degrees.  When slightly cool, mix glaze and drizzle over crust.

Glaze

1 cup powdered sugar            3 TBS milk
1 TBS butter melted

However, you know me and the dough thing... I would be using Pillsbury Rollout pie crust!

Celebrating: Visiting Cousins!

Celebrating: Visiting Cousins!: Not much going in my little world these days, so it was a great treat to have relatives from Iowa, Tennessee and Mississippi this past weekend

On Saturday night my mom hosted us all for dinner - 14 in all . Our guests from Iowa included my cousin Deb, her husband John and my Aunt Mona aka "Aunt Moner." (who lives in Buford, GA)  Aunt Mona is my Dad's sister and Deb's Mom.  Deb was a little over a year older than me and my "idol" growing up!  I commend her for putting up with her "pesty younger cousin" on some of those days! We lived about a block from each other growing up, and I think I was at their house as much as mine.   Many a happy memory of days gone past, that is for certain!  I'll never forget one of her birthday parties - we had a "dress-up" party.  But we didn't have a costume box with princess dresses and plastic sequin shoes. No sir, we were authentic Dress-up girls, wearing our Mom's clothes and jewelry, down to their several sizes larger high heels, which, I probably walked in better then than I can now!  After we were outfitted, we did a neighborhood promenade decked out in all our glory! 

My Aunt Mona is hoot!  She is so talented!  When she was younger, she  danced in a small group, along with Broadway Star Barbara Cooper that backed up Dick Van Dyke! She and my Dad and my Dad's brother Uncle Freddie loved to dance (I did not get that gene passed to me, BTW).  I remember many nights they would start dancing the jitterbug and other popular dances of the time.  I can still envision them "cutting the rug" in Aunt Mona's basement!  Aunt Mona also took Debi and I to see The Beatles when I was in the 4th grade.  Yep, the real Beatles!  It was a night filled with ear piercing screams, fainting girls and "Yeah, Yeah, Yeahs"!  I actually still have my "I love the Beatles" banner.

Our other guests included my cousins from Collierville, TN, Ann and Alvin.  Alvin is my Mom's oldest sisters, oldest child.  They were both born and raised in New Orleans, but moved to Collierville shortly after Katrina.  I did not get to see Alvin much growing up.  Just the occasional visit when we both happened to be visiting my grandmother in Mississippi at the same time.  However, for the last 10-15 years, the visits have happened much more frequently, as they both have the "travel bug."  I have really enjoyed getting to know both of them. We have had the opportunity to spend a couple of Florida mini vacations together and I can tell you...I finally have met my match with shopping!  Ann is a great shopping buddy!  Ann and Alvin came back Sunday evening for a visit before heading to Gatlinburg on Monday.

Aunt Ruby and Uncle George stopped by Monday on their way to Gatlinburg and spent the night with Mom.
A. Ruby and U. George  stayed with Mom on one condition...that she not cook!  So Mom relented and we got our favorite Chinese take-out, Mr. Egg Roll. My Aunt Ruby is one of my Mom's younger sisters. Aunt Ruby and Uncle George are just about the finest role models for Christians that I know.  Their knowledge of the Bible is staggering and their love for God is so evident in their life.   It is truly inspiring to be with them.

And, as usual, Saturday night looked like Thanksgiving, except for a Pork Roast instead of a Turkey.  I've said it once and I'll probably say it over and over again... my mama is the best cook and the best hostess ever! I am so in awe of her everytime I sit at her table.  She fills my plate and my heart with love!

Today's featured recipe is just one that Mom is famous for...Her Rum Cake.  She makes it in mini loaves and there is no telling how many of these little goodies that she has made and given away!  It has such a pretty presentation and they make perfect little hostess gift or for Christmas gifts.

                                             
Liz's Rum Cake

1 cup chopped pecans                                                  4 eggs
1pkg, yellow cake mix                                                 1/2 cup water
1 sm, package vanilla instant pudding                         1/2 cup butter
                                                                                      1/2 cup rum

Sprinkle nuts over bottom of pan (sprayed with oil) Stir together cake mix, puddig mix, eggs, water,butter and rum.  Pour batter over nuts,   Bake 35 minutes at 325.  (I use small pans)
cool 10 minutes.

Glaze

1/2 cup butter                        1/4 cup water
1 cup sugar                            1/2 cup rum

Melt butter, sugar and water.  Boil 5 minutes.  Remove from heat, stir in rum.  Brush glaze evenly over top and sides of cake.

Killer Pumpkin Bars


I love fall! Fall is my favorite season! I used to love Spring because that meant the beginning of summer, the beginning of the tanning season and the shedding of sweaters to show off  the ever present bronze glow I kept all summer and fall. These days, the only bronze I have comes from a tube, and regrettably, I kinda like the extra cover of the sweaters.

Fall is also the prime time for Festivals and I do love a good Fall Festival!  The Lilburn Women's club is hosting their 38th year of Lilburn Daze, which happens every 2nd Saturday in October.  There will be over 200 booths and snack shacks to rumble through.  I will be on quest to find Fried Pickles, because they are my favorite festival food indulgence! 

Fall also signals the beginning of pumpkin season for me, for I love all things pumpkin!  Pumpkin Spice lattes, Pumpkin Ice Cream, Pumpkin Smoothies (just found a recipe for this one - can't wait to make it)  But, my favorite has to be the Killer Pumpkin Bars, a recipe I got from my "cyber friend" ChefBeck from the Contessa's Kitchen Board. As a matter of fact, Chefbeck has quite the reputation for her "Pumpkin Love" on our board, and has been fondly dubbed "Queen of the Pumpkins."  I think in her book, there is no such thing as TOO MANY pumpkins! 

I just happened to have 3 cans of Pumpkin that I had in my pantry from last winter, Found last winter in a "clearance buggy" for .58 a can.  There were only 3 cans left or I would gotten all that had!  So, last Friday I decided to make my first batch of the season.  Started  getting all my ingredients together and discovered I only had 2 eggs - no worries, half a recipe of Pumpkin Bars is better than NO Pumpkin Bars!  If you love pumpkin, I encourage you to make this recipe!



Killer Pumpkin Bars

2 cups sugar
1 cup butter (2 sticks), room temp
2 cups canned pumpkin (one 15 oz can)
4 eggs, room temp
2 cups flour
2 tsp. baking soda
1 tsp each - cinnamon, nutmeg, allspice, ginger, ground cloves
1/2 tsp salt

preheat to 350. Lightly grease 15 x 10 1/2 x 1 pan.  Sift flour, baking soda, spices and salt together; set aside.  Cream butter and sugar til smooth.  Add pumpkin and eggs; beat til smooth.  Add dry ingredients and mix until well combined. Spread mixture into pan. Bake for about 25 minutes (or until cake springs back when touch or toothpick comes out clean)  Cool completely and frost.

Icing  (see cook's notes)

3 oz cream cheese, room temp
1 stick bitter, room temp
1 tsp vanilla
1/2 tsp orange zest (optional)
2 cups powdered sugar

Beat together until smooth. 

As I said, this recipe can be easily halved.  

Cooks notes:

I encourage you to make this with the icing recipe above - it is just divine and if I was making this for an event I would not change a thing! ! 

 However, this time I lightened it up a bit.  I beat 8 oz FF cream cheese, 1/2 a tub of light cool whip and 3 TBS powdered sugar, vanilla and cinnamon.  I discovered that a" less sweetened" icing really enhanced the pumpkin taste.

So get out and enjoy this wonderful season, look for a Fall Festival to attend !  And if you can squeeze it into the day, drop by the store and get some canned pumpkin to make these delicious bars!

This post is dedicated to my sweet boy, Kringle, who left us way too soon, but will never be forgotten!

Everyone who knows me, knows I am definately a "cat person,"  but what they don't know is that I haven't always been one.  We always had dogs growing up, we did have the occasional cat that took up residence at our house, but the cats never lived the "life of the dog."  So I was as surprized at myself as everyone else when I brought my Prissy home.  I was visiting my friends Julie and Sharon and one of their cats had recently had kittens - I took one look at the little grey fuzz ball with the huge green eyes and I just had to make her mine.  Never mind that I had no intention of having a pet, much less a cat when I walked into their home that afternoon.

I had Prissy for 19 1/2 years. She was my baby!  However, Prissy soon gained a reputation among my friends,  for she was not a very "social" girl.  Prissy let NO ONE touch her except me.  She usually hid whenever anyone was there, or I had to put her in another room. In fact, when I gave her a "Sweet 16" party, she spent the entire time in her room .I did bring her out so we could sing "Happy Birthday" and as soon as we sang the last verse she hissed...very loudly!  One of my friend's comented to my mom - "I never thought I would be going to a cat's birthday party".  My mom responded " I can top that, I never thought I would be signing a birthday card for a cat - Love Grandmother".  But Prissy was special to me, if I was sitting down - she was in my lap.  She followed me from room to room just waiting for me to settle down so she could.  It was a very sad day indeed when I knew Prissy was just too sick to live for MY sake.

I had decided to wait until spring to get another cat.  I was still grieving for Pris, but gosh my house was quiet!  I didn't realize how much talking I did to my girl!  Now during the time Pris first got sick, Julie just happened to have another litter of kittens at her house.  She kept telling me about them and I kept telling her I was not ready, it was just too soon. But my home was just not the same, I was so lonesome.  So  a week or so before Christmas, I decided to just go "take a look" at the kittens.  There they were... five of the most adorable kittens: 2 solid black, 1 black and white and 2 yellow and white, one long hair, one short hair.  As I was watching them frolic and play the ways kittens will do, I knew my heart had once again been stolen.  I wanted another female and the only female was the short haired yellow and white, but that other long haired yellow was just too cute for words. Soooo, my logic of  "ya know, if I have 2 cats they will keep each other company and I won't worry so much about leaving it alone, turned into reality.   I was now the proud "mama" of not one but two cats.  Good willpower, huh? The first time I picked up Kringle and got a good look at his paws, I knew this was not going to be the dainty cat I was used to and he proved me right.  Last vet visit he as a 12 pounder, but looked bigger because of all his fur!  He was one handsome boy!    They needed about a week more with their "real" mom, so 6 days before Christmas, Julie brought me the best present ever! And, since it was close to Christmas and since Christmas is my favorite season I named then Kris and Kringle!  I think I had to upright my Christmas tree about 3 times before Christmas - needless to say, the tree came down very early that year.

For almost 3 years now I have adored watching them play, curl up next to each other and nap and then play some more.    They are both so sweet, and have a great temperment.  No hiding them from the public!  Kring was the master manipulator - if Kris was in my lap, he would rouse her into playing and then did the ole' switcheroo and got in my lap. He also demanded attention, much more so than Kris, who willingly gave up very easily.  She loved her brother and often gave him an afternoon "kitty bath!"

Then, last Tuesday morning I got up and found my sweet, sweet boy had passed away during the night.
I was and am, still devastated over losing him.  I do not know what happened, he was fine when we went to bed, I just like to think whatever it was, it was quick.  My little Kris wandered around aimlessly for a couple of days but she is much better.  In fact, I do believe she is liking so much extra attention!

But. the story does not end there, as I haven't told you about my 3rd cat.  Long story short - a mama cat decided my deck was the perfect place for a nursery, so last summer I had mama and 4 kittens. I have taken Mama cat in, had her spayed and she is living in my spare bedroom - this is a recent adddition and we are
 s-l-o-w-l-y taking our time to get acquainted.  Kris sure hopes she will hurry because she really misses her playmate!  BTW mama cat is a Calico, so her name is Kallie (spelled with a K because of my K& K)

I will sure miss that boy!

As usual, I want to sign of with a favored recipe!  I saw a short infomercial on Food Network of Giada making these bars and I love them.  The recipe was Lemon Thyme Bars, but I had some fresh basil in my fridge that really needed to be used,  so I replaced the thyme with basil.  The second time I made them, I used gluten free flour so my brother could get a taste.  Using the gluten free flour gave them a different texture (very crumbly) which I really liked.  This would be a great recipe if you have an abundance of basil that needs to be used before the cold weather sets in on the basil!

Lemon Thyme Bars  



Preheat oven to 325 degrees

1 cup flour
1/2 tsp salt
2 TBS Thyme (I used basil, but I bet rosemary would be great, too!)
1 stick butter (room temp)
1/2 cup powdered sugar
Juice from 1 lemon
1/2 tsp vanilla extract

optional -I also zested the lemon before juicing and added to dough and  glaze

Combine flour salt and (herb of choice)   In another bowl cream butter, powdered sugar and juice from half a lemon (and optional zest)  Slowly add flour mixture to butter mixture and combine well.  Place dough in center of a buttered/floured 8 x 8 dish.  Wet fingers and spread dough across pan.  Bake 325 for 30 minutes.

Glaze - optional - 1/2 lemon juice and zest, 1/2 powdered sugar . Stir until pouring consistency and pour over cooled bars.

Celebrating: Church ladies!

Celebrating: Church ladies!:
Twice a year, the Women's Group at our Church has a luncheon.  It is a great opportunity to visit with old friends and also to meet new ones.  The meals are catered, usually by a member of the Church.  The food is always plentiful and outstanding - and this year was no different.  Our buffet included Ham and Cheese Croissants, Corn Pudding, Fruit Bowl and also Vanilla Yogurt with  berries and granola for toppings!  But I'm not finished - the dessert table was filled with an assortment of treats.  Glazed Zucchini Cookies, an apple cream cheese cake and another type of  pound cake..But my personal favorite - mini Pumpkin tartlets! And for the sake of my blog, I tried to sample everything, but unfortunately missed the pound cake, but I heard from others at my table that it was delish!


We also have a tradition of "decorating the tables."  You sign up to "host and decorate" a table for 6-8 people.  This is an opportunity to use that China that may be hidden in a box or just used for "special" occasions.  There are so many talented "tablescape" creators" at our Church!  I always look forward to see the 'theme" people have come up with for the day.  This Fall luncheon had a different twist!  Paper products!  I had decided on a theme months ago when I was researching creative ways to display fruit for Mom's birthday reception.  On one display, they had made a palm tree out of pineapple skins!  So there was my theme -Luau! My clever mom came up with our "table favor."  She made crabapple jelly, filled a plastic martini glass, sealed it with parafin and stuck in a little umbrella! Walla!  The perfect Presbyterian cocktail!   They really "made" the table. Luckily I had several "Hawaiian" type nick-nacks, so most every thing I used I already had on hand.  I went to Hobby Lobby to find some flowered napkins and instead found the cutest napkins shaped like a Hawaiian shirt.  Just love when that happens!

My feature recipe comes from our Saturday caterer, Pat!  She was kind enough to share the recipe for the Pumpkin Tartlets. Not only were they very tasty, but cute as a button!  They were garnished with  a dollop of whip cream, a sprinkle of cinnamon and a mini maple leaf shaped cookie was perched in the cream!  

Pumpkin Tartlets

9 14 or can EAGLE BRAND sweetened condensed milk (NOT evaporated milk)
1 1/4 cups canned pumpkin puree
2 TBS Brown sugar
1 egg
1/4 tsp ground cinnamon
1/4 tsp pumpkin pie spice
24 (3 inch) unbaked tart shells

Directions:
1) preheat oven to 375 degrees
2) Whisk together EAGLE BRAND milk, pumpkin, brown sugar, egg, cinnamon and pumpkin pie spice.  Pour evenly into tart shells.
3) Bake for 18-25 minutes or until center is just set and pastry is golden.**Check at 13 minutes - may  
    need to turn to prevent over browning.
4) Cool and garnish

***Cooks notes - Use 1 1/2 recipe for 24 tart/pie shells.  Cook a few minutes longer for full shells - looks much nicer when full instead of skimpy.

Celebrating: Family!

Celebrating: Family!:
Celebrating: Family will probably be a recurring theme here at "Sissy Celebrates!"  I have truly been blessed with the best and couldn't possibly come up with enough words to tell you about them in one post!  I am the oldest of three - me, my sister Charlene and brother Chuck.  We had "hands down" the best ever childhood! I might even "go out on a limb" and say we were a wee bit spoiled!   My mom and dad worked very hard to provide the best for us, but giving us a loving home was their greatest gift. 

And, as in most families, the heart of our home was the kitchen. My Mom was a Registered Dietitian and I remember being taught the basic food groups at an early age.  A balanced, home cooked,  delicious meal was on the table every night.

When my first niece, Laurel, was born 16 1/2 years ago, we started a tradition of having dinner together as a family every Friday night and I can proudly say that tradition lives.  It may not happen every single Friday these days, because Friday Night High School Football  has creeped into the schedule, but for the most part Friday is designated as Family Dinner Night for those of us that live close together.  Unfortunately my brother's family now lives too far away to join us on Fridays, so about every other weekend on Saturday or Sunday night  we gather again as a family to catch up with each other and EAT.  My mom will generally lay out a feast to rival Thanksgiving!  And I'm not kidding! It's a table filled with good southern comfort food. Fried okra, stewed corn, peas and cornbread make a regular appearance, and that alone would be great, but I kid you not, we will probably have at least 6 -8 more choices!  She puts out a spread that I would put up against Paula Deen any day!  Not only do we have a heaping plate of food, we have a heaping plate of love which makes it even more special!  And after we have all eaten til we could pop, we fill our plates full of leftovers for the next night! Take Out at its very finest!


Laurel

I am so proud of all my nieces!  Laurel is a junior in High School, has a heavy duty school schedule and is the manager for  the Girls Volleyball Team.  Emily, a freshman, is cheering for the 9th grade basketball team  and baby Ava at 4 1/2 is generally our "after dinner" entertainment! Last Saturday Night we had our Family dinner and I made a dish I had seen on PD the day before.  It was so good and would be a perfect compliment to an upcoming fall meal.


                                                              

Butternut Squash Casserole (Paula Deen Recipe)

3 butternut squash, peeled, seeded and cubed
1 onion, chopped
3 lg eggs 
1/2 cup coconut milk
1 2/2 tsp curry powder
1 tsp salt
1/4 tsp black pepper
1/2 cup raisins *
1/2 cup sweetened flaked coconut

DIRECTIONS

Preheat oven to 350 degree's.  Lightly grease a 2 1/2 qt casserole dish

In a large Dutch Oven,, combine squash and onion; add water to cover.  bring to boil ** over high heat and cook 10 -12 minutes or until squash is tender; drain well.  Spoon squash mixture into lg bowl.
In a small bowl, whisk together eggs, milk, curry powder, salt and pepper.  Add squash mixture.  Beat at medium speed with electric mixer until smooth.  Spoon into prepared baking dish; sprinkle evenly with raisins and coconut.  Bake 400 minutes or until center is set.
Cooks notes
*  I used craisins, because that is what I had on hand. 
**I did not boil my squash, instead I roasted til fork tender.  I also drizzled EVOO over the top and     sprinkled the squash with a bit of cinnamon and cumin.
